Weekends mean Brunch!

The weekend is a good time to indulge over breakfast and we’ve got the perfect lactose free brunch recipe for you!

This double cheese omelette is really easy to make and very versatile – throw in tomatoes, mushrooms, slices of ham, smoked salmon or whatever you fancy!

Here’s what you need:

4 eggs
30g Lactofree semi-hard cheese, grated
85g Lactofree soft-white cheese
2 tbsp fresh herbs (chives, basil)
Salt and pepper

And here’s how to make it:

1. Beat the eggs in a bowl with the grated semi-hard cheese, half the fresh herbs, any vegetables you’re adding and some salt and pepper.

2. Mix the soft white cheese with the remaining herbs and set aside.
3. Heat a frying pan over a fairly high heat and add a little oil. When hot, pour the egg mixture into the pan.
4. Move the pan around to evenly distribute the egg mixture and allow to cook for a couple of minutes. Continue to move around the pan, lifting the edges with a spatula so any runny egg flows down onto the pan, until there’s no runny egg left.
5. Remove the pan from the heat, spoon the soft white cheese down the centre, add ham or smoked salmon if you wish, and fold the omelette over.
6. Serve with salad, toast and if you’re feeling really indulgent, some American style fried potatoes.
