Lactose Free Irish Recipe

Colcannon, the traditional Irish version of bubble and squeak, creates a simple, healthy and tasty dish of potatoes and cabbage with creamy leeks you can enjoy this St Patrick’s Day.

There are many variations of Colcannon, but our recipe includes Lactofree-simmered leeks and soft white cheese to bring an extra fresh and creamy richness to the vegetables. You can also add crispy bacon or ham for extra flavour.

Ingredients:
2lb potatoes, peeled and cut into pieces
1 small cabbage, cored and chopped
2 small leeks, white parts only, sliced
1 cup Lactofree whole or semi skimmed
4 oz Lactofree soft white cheese
1/2 tsp white pepper
6 rashers of bacon

Method:
1. Boil the potatoes until tender and in a second pan, boil or steam the cabbage until tender. Drain, cover and set aside.
2. In a medium saucepan, simmer the leeks in Lactofree whole or semi skimmed for five minutes. When the leeks are soft, remove with a slotted spoon and put to one side, reserving the liquid.
3. Meanwhile, fry or grill your bacon and cut into pieces.
4. When the potatoes are tender, drain well, add half the Lactofree whole or semi skimmed used to simmer the leeks and mash until smooth.
5. Add the Lactofree soft white cheese and white pepper then mash again until blended. Use remaining Lactofree whole or semi skimmed if needed.
5. Stir in cabbage, leeks and bacon.
