Celebrate a Lactofree St Patrick's Day
In honour of St Patrick’s Day, Team Lactofree have created a craic’in’ recipe for Colcannon, the traditional Irish alternative to bubble and squeak, creating a simple, healthy and tasty dish of potatoes and cabbage.
Many variations of Colcannon exist; our recipe includes milk-simmered leeks and soft white cheese to bring an extra fresh and creamy richness to the vegetables.
Ingredients:
2lb potatoes, peeled and cut into pieces
1 small cabbage, cored and chopped
2 small leeks, white parts only, sliced
1 cup Lactofree milk
4 oz Lactofree soft white cheese
1/2 teaspoon white pepper
Method:
1. Boil the potatoes until tender and in a second pot, boil or steam the cabbage for until tender. Drain, cover and set aside.
2. In a medium saucepan, simmer the leeks in Lactofree milk for five minutes. When the leeks are soft, remove with a slotted spoon and put to one side, reserving the milk.
3. When the potatoes are tender, drain well, add half the milk used to simmer the leeks and mash until all the lumps have gone.
4. Add the Lactofree soft white cheese and white pepper then mash again until blended. Use remaining milk if needed.
5. Stir in cabbage and leeks.
6. Serve with cold Guinness!
