Lactofree Pad Thai Sauce. Yum!
Our guest editor, Sara Habein, author of the blog When Dairy Is Not Your Friend has created yet another fabulous lactose intolerance friendly recipe for the lucky readers of our site, Lactofree.co.uk.
Easy Pad Thai Sauce
Makes enough for 500g rice noodles, around 6-8 servings with added meat and vegetables.
30 ml. peanut oil (2 tbsp.)
375 ml. peanut butter (1 1/2 cups)
80 ml. water (1/3 cup)
80 ml. soy sauce (1/3 cup)
250 ml. Lactofree dairy drink (1 cup)
250 g. brown sugar (1 cup)
80 ml. lime juice (1/3 cup)
30 g. garlic powder (2 tbsp.)
15 g. paprika (1 tbsp.)
cayenne pepper to taste
In a sauce pan, mix together all ingredients but the cayenne pepper and heat over medium until smooth. A pinch at a time, add cayenne pepper until the desired amount is reached.
Serve with rice noodles, shredded carrots, bean sprouts, cooked chicken, or any other meat/vegetable choice.
