Get Cooking With Our Celebrity Chef!
Celebrity chef Lesley Waters, who you may now from the popular TV show Ready, Steady Cook, has been cooking up a storm for us in the Lactofree kitchen this month and has devised a number of delicious recipe ideas suitable for those with lactose intolerance.
Sweet Apple and Blackberry Pizza with Vanilla Custard
Serves 6
For the pastry:
225g/8oz plain flour + extra for rolling
55g /2oz icing sugar
60ml/4tbsp olive oil
1 orange, zest only
3 desert apples, quartered, cored and sliced
25g/1oz caster sugar
1tsp ground cinnamon
125g/4 ½ oz blackberries
1. Sieve the flour and icing sugar into a bowl. Make a well in the centre and pour in the oil, zest and 45ml/3tbsp water. Mix together with the back of a flat bladed knife and bring together to form a soft dough, adding extra water if necessary. Wrap in cling film and chill for 1 hour.
2. Preheat the oven to 375F, 190C, Gas Mark 5. Line a baking tray with non-stick baking parchment.
3. Place the pastry on the lined baking tray, dust with a little flour and lightly and carefully roll out into a rough circle approx. 27cm (11 inches) in diameter.
4. Arrange the apples over the pastry leaving a 1.3cm/ ½ in border.
5. Mix together the caster sugar and cinnamon and sprinkle over the apples.
6. Using your hands or the paper to help you, carefully pull over the edge of the pastry to form a rough crust around the outside of the tart.
7. Bake in the oven for 20 minutes then scatter over the blackberries and cook for a further 10-15 minutes or until pastry is golden and crisp. Serve with custard.
Vanilla Custard
Serves 4-6
3 medium egg yolks
40g/ 1 ½ oz caster sugar
2tsp cornflour
600ml/ 1 pint Lactofree
10ml/2tsp vanilla extract
1. In a bowl, whisk together the yolks, sugar and cornflour.
2. Place the lacto free in a pan and bring to the boil. Pour over the egg yolk mixture, stirring well.
3. Pour the mixture into a clean pan and bring slowly to the boil, stirring all the time. Reduce heat and gently simmer for 1 minute or until thickened.
4. Remove from heat and stir in the vanilla extract.

oh that sounds so nice. I must try that out. I’ve never been diagnosed but got a few of the symptoms described.
