Happy St David’s Day
If you’re lucky enough to be in Wales today, you’ll be swept up in the spirit of celebration!
Today celebrates the patron saint of Wales, Saint David, or Dewi Sant as he is known in the Welsh language. He lived in the sixth century as a Celtic monk and the archbishop of Wales. Each year, his memory is kept alive through parades and feasts.
If you are celebrating today, try our take on a lactose free recipe for Welsh Rarebit. Miniaturised into bite-sized portions, these are the perfect St David’s Day party treats!
Mini Cheese and Olive Welsh Rarebit Bites
Ingredients:
4-6 slices bread,
4 ounces grated Lactofree Semi-Hard Cheese
½ tsp mustard powder
2 tbsp homemade mayonnaise
2 ounces green pitted olives, finely chopped
6 extra olives, cut into half (to garnish)
2 sun-dried tomatoes, drained and finely chopped
6 cherry tomatoes, cut in half
Salt and pepper
Method:
1. Stamp 12 two-inch rounds out of the bread.
2. Pre-heat the oven to 230ºC and line a baking tray with greaseproof paper.
3. Lay the bread rounds on the lined tray and bake for about 3-5 minutes or until a pale golden brown.
4. Mix the grated Lactofree semi-hard cheese, chopped olives, chopped sun-dried tomatoes, mustard powder and mayonnaise together – season with salt and pepper to taste.
5. Spread the mixture over the top of the pre-toasted bread rounds and bake in the pre-heated oven for about 5 to 8 minutes, or until the mixture has melted and is bubbling.
6. Remove from the oven and garnish each one with half a cherry tomato before returning to the oven for 1 – 2 minutes.
7. Take out the oven and finish off by placing half an olive on top of each.
