Lactofree Potato Soup

Our guest editor Sara Habein, writer of the blog When Dairy is Not Your Friend, has created this lactose free potato soup just for the readers of Lactofree.co.uk. Cook it up and tell us what you think!

POTATO SOUP

60 ml. margarine
1 large onion, chopped
6 potatoes, peeled and diced
3 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
750 ml. chicken or vegetable broth
45 g. flour
750 ml. Lactofree milk
15 g. dried parsley
2.5 g. dried thyme
black pepper to taste

1. In a large stockpot, melt margarine, add onions and garlic, and cook until the onions are soft. Adding the flour, stir constantly to make a thick paste.

2. Stir in the milk and mix well. Add the potatoes, carrots, celery, broth and seasonings. Bring to a boil, the reduce heat to medium-low and let cook until vegetables are soft, about 25 minutes.

Makes 6 servings
