Vanilla-Cinnamon Pancakes

Here's a special Valentine's twist to the delicious recipe from our guest editor Sara Habein, author of the blog When Dairy Is Not Your Friend. She has created this Vanilla-Cinnamon Whole Wheat Pancake recipe exclusively for Lactofree.co.uk, which is delicious served with Lactofree fruit yogurt! Cut your pancakes into hearts and serve them to your sweetheart!

Ingredients

500ml/2 cups Lactofree fresh dairy drink (whole or semi-skimmed)
375g/1½ cups wholewheat flour
125g/½ cup all-purpose flour
30g/2tbsp brown sugar
20ml/4tsp baking powder
2.5ml/½tsp salt
5ml/1tsp cinnamon
5ml/1tsp vanilla extract
3 eggs, beaten

Instructions

1. In a medium-sized mixing bowl, stir together the flour, sugar, baking powder, salt and cinnamon. 2. Make a well in the center of the dry mixture and set aside.
3. In a second medium-sized mixing bowl, combine the eggs and Lactofree dairy drink
4. Add the egg and Lactofree mixture all at once to the dry mixture and stir until just moistened (batter should be lumpy).
5. For standard-size pancakes, pour about 60ml/¼ cup of batter onto a hot, lightly greased griddle or nonstick pan.
6. Cook over a medium heat for about 2 minutes on each side – turning when pancakes have bubbly surfaces and edges are slightly dry.
7. Remove from the pan when the pancakes are golden brown.
