Tasty Lamb Rogan Josh
Meal types: Main Meals
A simple, healthy and low-fat curry that's so good you'll want to come back to it time and time again!
Ingredients
600g lamb, diced
2-3 cloves of garlic
Thumb-sized chunk of root ginger
1 tsp turmeric
3 tsp garam masala
2 tsp ground coriander
2 tsp ground cumin
1 tsp chilli powder
1 tsp salt
50ml Lactofree cream
2 medium onions – finely chopped
300g chopped tomatoes
Handful of chopped coriander
Instructions
1. Heat some oil in a large pan on a high heat and add the onions, garlic and ginger, stirring until they just begin to soften.
2. Add all the spices and continue to fry. Don’t worry if the onions are a little dry.
3. Add the lamb and continue stirring for around 5 mins, making sure the spices work their way into the meat.
4. Add the chopped tomatoes and stir further, before adding the cream to the mix. Bring the whole mixture to a boil.
5. Once boiling, reduce the heat immediately to the lowest it can be and place a lid on the pan. Leave for 60 mins, stirring periodically.
6. Over time the mixture should begin to thicken. Once at the desired consistency, stir in the chopped coriander and any further seasoning to taste.
7. Serve with boiled rice and enjoy!
