Perfect Pancakes

Celebrate Shrove Tuesday with these easy to make lactose free pancakes, perfect with both sweet and savoury toppings. We love them so much, we'll be enjoying them all year round!

Ingredients

100g (4 oz) plain flour
1 egg
450ml (16 fl oz) Lactofree fresh dairy drink (whole or semi-skimmed)

Instructions

1. In a mixing bowl, combine flour, egg and dairy drink.
2. Heat a large frying pan over medium high heat. Lightly grease with vegetable oil. Pour about 4 tablespoons of your mixture into the pan, lift the pan and turn it by rotating your wrist, spreading a paper-thin amount over the bottom of the pan.
3. Carefully flip the pancake when it starts to bubble. When it is finished cooking, remove it and repeat this process with the remaining batter.
