Oat Pancakes

Nothing beats pancakes with maple syrup! Try your hand at Mia Botcher's lactose free recipe - perfect for both those with lactose intolerance and without!
Ingredients
1 cup oats
1½ cup Lactofree fresh semi-skimmed dairy drink
2 eggs
1 tablespoon oil (flavorless like light olive oil)
½ cup plain white flour
2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon sugar
(maple syrup)
Instructions
1. Mix oats and Lactofree dairy drink together and allow to stand for 10 minutes.
2. Mix the eggs in the bowl with the oats and dairy drink
3. Mix flour, baking powder, salt and sugar in a bowl and add it gradually to the wet ingredients.
4. Let the it stand for 10-15 minutes.
5. Stir, and add small batches to a blini pan or a normal pan, letting them bake 1-2 minutes until the edges starts to firm and bobbles appear, turn and bake for another 1-2 minutes on the other side.
6. Best served with maple syrup.
