Lactose Free Cupcakes

Try Sam's recipe for lactose free cupcakes, simple to make and simply delicious!
Ingredients
For the cupcakes:
4oz Lactofree spreadable
A few drops of Lactofree fresh dairy drink (whole or semi-skimmed)
4oz caster sugar
4oz self raising flour
2 eggs
For the icing:
5oz Lactofree spreadable
10oz icing sugar
Instructions
For the cupcakes:
1. Cream together 4oz Lactofree spreadable and 4oz caster sugar until creamy.
2. Add 2 eggs and mix.
3. Fold in 4oz self raising flour. Add a tiny bit of Lactofree dairy drink.
4. Bake for 15-20 minutes on gas mark 4.
For the icing:
1. Cream together 5oz Lactofree spreadable and 10oz icing sugar.
Voila! Perfect lactose free cupcakes!
