Traditional Trifle

One of your most requested recipes! You might think that trifle is off limits if you are lactose intolerant - but you'd be wrong with this simple lactose free recipe from Rosie Wareham.
Ingredients
For the custard
3 medium egg yolks
40g/ 1 ½ oz caster sugar
2tsp cornflour
600ml/ 1 pint Lactofree fresh semi-skimmed dairy drink
10ml/2tsp vanilla extract
For the trifle
135g raspberry gelatin
8 slices raspberry sponge roll
A good glug of sweet sherry
175g tinned mandarins
A few drops of vanilla extract
275ml Lactofree cream – lightly whipped
A small block of good quality dairy-free chocolate
Instructions
For the custard
1. In a bowl, whisk together the yolks, sugar and cornflour.
2. Place the Lactofree dairy drink in a pan and bring to the boil. Pour over the egg yolk mixture, stirring well.
3. Pour the mixture into a clean pan and bring slowly to the boil, stirring all the time. Reduce heat and gently simmer for 1 minute or until thickened.
4. Remove from heat and stir in the vanilla extract.
For the trifle
1. Make the gelatin by following the instructions on the the packet. Pour into a dish and leave (takes a long time to set so best to do it day before you make the trifle). Once the gelatin is set, roughly chop.
2. Put 2 pieces of the sponge into the bottom of each glass, or do a good lining of sponge roll in a big bowl.
3. Drizzle with the sherry and pour over half of the custard.
4. Spoon the gelatin over the custard, then add the mandarins.
5. Cover with the rest of the custard, drizzle with a little vanilla, and cover with the whipped cream.
6. For decoration, finely grate the dairy-free chocolate over the top. Alternatively, use cake sprinkles, so long as they contain no dairy.
Leave to stand for a hour before serving, then tuck in and enjoy with all the family!
