Lemon Curd Cheesecake

Lemon curd oozes out of the middle of this cheescake when cut open...

Ingredients

For the base:
175g/6oz digestives
45ml/3tbsp sunflower or light olive oil

For the filling:
450g/1lb Lactofree Soft White Cheese
2 large eggs
115g/4oz caster sugar
Half a jar of lemon curd

For the topping:
Fruits that you desire

You will also need a 20cm/8inch loose-based, spring–form tin.

Method

1. Pre-heat the oven to 180C/350F/Gas Mark 4.
2. Place the biscuits in a food bag and beat with a rolling pin to form crumbs (doesn’t have to be perfect, few biscuit bits make it crunchy).
3. Place in a bowl, add the oil and mix together well. Spoon into the base of the tin and level off flat to form the base for the cheesecake. Bake in the oven for 10-15 minutes until the base is lightly browned. Remove from the oven and allow to cool on a wire rack.
4. When the biscuits are cooler, spoon a thick layer of lemon curd onto the top. Try avoiding the edges.
5. Reduce the oven temperature to 160C/300F/Gas 2. Meanwhile, place all the filling ingredients into a large bowl and beat together until smooth. Pour onto the cooled base and return to the oven for approximately 40/45 minutes.
6. Allow to cool (the cheesecake may get a slight crack as it cools). Place in the fridge for 2-3 hours.
7. Carefully remove the cheesecake from the tin before serving – it’s easier to leave the cheesecake on the base and place on a serving plate. Spoon over fruit if desired and dust with icing sugar just before serving.

Hi i would like to make this for my daughter but ...the only digestives i can find contain milk, does this mean they will contain lactose too? if so what other biscuits can i use?

Mcvities 'light' digestives dont contain any milk (lactose) ingredients alternatively you can use gingernut biscuits as i believe they too are lactose free (personally i prefer the light digestives as a base, but thats probably because i dont like ginger!) enjoy :-)

Tesco value digestives don't contain milk either. They taste just as good! :-)

Yeah, you can add any biscuits you want... I just used them, as I can never find light ones. :-( I love making recipes up from existing ones. Lemon curd is just amazing to add to the dessert.. Hope you found what you needed?

hobnobs dont contain any dairy (ok the milk chocolate ones do) but the plain ones dont :-)
