Gluten Free and Lactose Free Carbonara

This delicious Carbonara serves 2-3 people and can be served with either gluten-free or normal pasta.
Ingredients
1 pack smoked bacon
Extra diced ham (optional)
1 medium onion sliced
1-2 cloves of garlic crushed
4-6 medium sized closed cup mushrooms, sliced
¾ pint Lactofree Whole or Semi Skimmed
2 heaped dessert spoons cornflour
Large pinch of dried oregano & basil (or fresh)
Plenty of black pepper
Method
1. Cut all the fat and the end bits off the bacon slices, chop and place in a dry pan. Start frying slowly, then gradually turn the heat up until all the pieces of bacon and fat are brown and crispy. Drain onto kitchen paper.
2. Use the fat from the bacon to fry the onion first, then add the garlic and mushrooms. Cook for a few minutes until everything is soft, then add the remainder of the chopped bacon and cook for about a minute.
3. Mix the cornflour with the Lactofree Whole or Semi Skimmed, add to pan with the herbs and black pepper. Bring to the boil, simmer for a minute or two, then check the seasoning. Add some chopped ham at this stage if you want the meal to go further.
4. Serve with gluten-free linguine or spaghetti with the bacon bits sprinkled on the top. Yummy!

This looks great :) i look forward to trying it- i only found out that i was Lactose Intolerant last week, i think im getting used to it now ;)
