Cajun Chicken and Cheese Ciabatta

Nothing beats a good sandwich, but this recipe takes things to a whole new level combining chicken, cheese, Cajun spices on a ciabatta.
Ingredients
1 chicken breast or 3 chicken thighs per person
Ciabatta
Salad leaves
Lactofree Semi Hard Cheese
Bacon
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp paprika
Olive oil
BBQ sauce or dairy free mayonnaise
Method
1. Butterfly the chicken breast or de-bone the thighs.
2. Mix the spices together on a plate and roll the chicken in them to cover.
3. Warm a frying pan with a tablespoon of olive oil and cook the chicken through. While the chicken is cooking, crisp the bacon slices and put to one side.
4. Slice the ciabatta and toast one side, turn over and cover with slices of the Lactofree cheese. Put under the grill to melt.
5. Once the chicken is cooked layer the ciabatta with salad leaves, chicken and bacon and add your favourite sauce.
