Creamy King Prawn Pasta

This lovely creamy pasta is easy to make and my whole family love it.

Ingredients

75g-100g pasta per person
240g king prawns
Handful of button mushrooms
Glass of dry white wine
1 onion
2 cloves of garlic
2 tsps mixed herbs
2 tbsp frozen peas or fresh broccoli

Method

1. Cook enough pasta of your choice, in boiling salted water for time recommended.
2. While this is cooking, finely chop an onion, crush a couple of cloves of garlic and slowly simmer until golden brown in a little olive oil.
3. Next, stir in the button mushrooms, until coated in oil, and golden. Add the white wine and heat through until the alcohol has burnt off.
4. Add the mixed herbs, frozen peas/broccoli florets and king prawns. Combine gently and reduce heat.
5. Check the pasta is cooked al dente, drain and set aside.
6. Gently stir through the Lactofree soft white cheese to the prawn mixture, until combined.
7. Finish by adding the cooked drained pasta, mix together.
8. Serve immediately with a mixed leaf salad and freshly milled pepper. You can also add shavings of Lactofree semi-hard cheese.
