Cheese Scones

Yummy cheese scones that indulge a cheese lovers urges. These produced a nice light scone that was very cheesy, but that's the best bit of being able to eat cheese again!

Ingredients

85g Lactofree soft white cheese
225g self raising flour
Pinch salt
100g Lactofree semi hard cheese, grated
150ml Lactofree semi skimmed (plus extra for brushing top of scones)

Method

1. Pre-heat oven to 220C/425F/Gas 7. Lightly grease a baking sheet.
2. Rub the soft white cheese into flour until incorporated.
3. Add pinch of salt, and 85g of grated cheese and mix.
4. Stir in the semi skimmed Lactofree to make a soft dough (depending on the flour you might not need quite all of this or you may need a little more).
5. Roll dough out to approx 1.5cm and using a scone cutter cut out scones, remoulding dough as necessary and place onto baking tray.
6. Brush with a little semi skimmed Lactofree and sprinkle remaining grated Lactofree semi-hard cheese.
7. Bake for 12-15 mins until well risen and golden.
