Leek, Spinach and Cream Cheese Parcels

My recipe is one I created years ago, but have only just been able to eat again thanks to Lactofree soft white cheese replacing the cream cheese.

Ingredients

1 leek, chopped fairly finely
1/2 bag baby spinach leaves, chopped coarsely
5 spring onions, chopped finely
200g Lactofree soft white cheese
50g sesame seeds
1 tsp olive oil
Seasoning to taste
Filo pastry – brushed with olive oil as per instructions on pack

Method

1. Lightly fry the leeks, spinach and onions in the olive oil. Add the sesame seeds, then remove from the heat and mix in the Lactofree soft white cheese. Season to taste with a little black pepper and salt.
2. Use the mixture to fill filo pastry triangles, much the same way as samosas are wrapped, brushing the pastry with a little oil before baking in the oven for 15-20 mins at 180C until they’re a light golden brown and nicely crisp.
3. These little parcels taste just as good hot as they do cold, and go really well with a green salad.
