Gingerbread Cake

Cooking time: 60 minutes
Ingredients
½ cup Lactofree Whole or Semi Skimmed
1 ½ cups wholewheat flour
1 cup white flour
¾ cups sugar
2 tsp baking soda
1 tsp cinnamon
¼ tsp salt
¼ cup black treacle
2 large eggs, lightly beaten
½ cup oil
1 tbsp apple cider vinegar
Method
1. Preheat the oven to 180C/350F/Gas Mark 4.
2. Mix together the flours, sugar, baking soda, cinnamon and salt.
3. Whisk together the Lactofree Whole or Semi Skimmed, eggs, oil and apple cider vinegar.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Pour into an oiled cake tin and bake for about 40 minutes, or until a skewer inserted into the center of the cake comes out clean.
6. Allow to cool before adding your choice of icing. Try either a lovely creamy icing made by simply adding sieved icing sugar to Lactofree Soft White Cheese (add slowly until you reach desired sweetness), or top the cake with our delicious Homemade Hazelnut Chocolate Spread before adding your choice of spooky decorations!
