BBQ Chicken Kebabs with Garlic Cream Cheese Sauce and Couscous Salad

Ingredients

Kebabs
1kg chicken fillet, sliced into bitesize chunks
½ onion, grated
3 garlic cloves
salt and freshly ground black pepper
1 tsp ground cumin
½ tsp cayenne pepper
4 tbsp olive oil
Your choice of veggies
Large wooden skewers soaked in water or 12 metal skewers

Garlic Cream Cheese Sauce
110g/4oz Lactofree Soft White Cheese
1 small clove of garlic
A few sprigs of fresh herbs: parsley, coriander, chives, tarragon or a mixture

Couscous Salad
1 cup couscous
1 cup water
¼ cup raisins
2 tbsp lemon juice
¼ cup toasted flaked almonds
2 tbsp each toasted pine nuts and toasted pistachios
2 tbsp chopped coriander
½ small red onion, thinly sliced
2-3 tbsp extra virgin olive oil
Salt and pepper and extra lemon juice, to taste

Method

1. Combine all kebab ingredients in a bowl and refrigerate for an hour.
2. Combine all the garlic cream cheese sauce ingredients and refrigerate until ready to use.
3. Divide the meat chunks among 12 skewers and intersperse with your choice of veggies to create your kebabs.
4. Combine couscous and water in a large serving bowl and allow to stand for 10 minutes to absorb the water.
5. Fluff up couscous with a fork before adding remaining ingredients. Season to taste with salt, pepper and lemon juice if desired.
6. After bbq-ing the kebabs, drizzle the garlic cream cheese sauce over the top, serve with the couscous salad.

please can you make skimmed lacto free milk? i buy loads of the semi skimmed but would prefer skimmed! thanks
