Cheesy Coleslaw

This simple coleslaw, perfect for bbq's and picnics, is easy to make and has a lovely fresh tang - ideal for summer!

Ingredients

1/2 large white cabbage
3 large carrots
1 small red onion
black pepper
3 tbsp Homemade Mayonnaise
Lactofree semi-hard cheese

Instructions

1. Slice onion, shred cabbage and grate the Lactofree cheese and carrots.
2. Put everything in a bowl with the mayonnaise and black pepper.
3. Add as much or as little grated cheese as you like (experimentation is the only way to find the best amount for you).
4. Mix well and chill for a couple of hours before serving.
5. Keep refrigerated and use within three days.
