Homemade Vanilla Custard

Serves 4-6

Ingredients

3 medium egg yolks
40g/ 1 ½ oz caster sugar
2tsp cornflour
600ml/ 1 pint Lactofree semi-skimmed
10ml/2tsp vanilla extract

Method

1. In a bowl, whisk together the yolks, sugar and cornflour.
2. Place the Lactofree Semi-Skimmed in a pan and bring to the boil. Pour over the egg yolk mixture, stirring well.
3. Pour the mixture into a clean pan and bring slowly to the boil, stirring all the time. Reduce heat and gently simmer for 1 minute or until thickened.
4. Remove from heat and stir in the vanilla extract.

Health notes

This homemade custard is has less than 10% sugar and surprisingly considering its rich and creamy taste, it contains only 2.1g saturated fat per serving. Perfect to make the Festive Fruity Trifle, to accompany the Sweet Apple and Blackberry Pizza, and also delicious with chopped bananas for a good old fashioned ‘bananas and custard’.

Thank heavens for this website, I wish I had found it earlier, my daughter of 11 months has loctose intolerant, I would love to know about ice cream too as I feel so bad that she can not join in with all the other children

Have any of you tried Swedish Glace? Its Lactose and Gluten free icecream, and most supermarkets do at least 1 flavour, normally vanilla but I've found other flavours in health food shops or my local farm shop as well and its really nice http://www.swedishglace.com/
