Sweet Apple and Blackberry Pizza with Vanilla Custard

Cooking time: 90 minutes
Ingredients
For the pastry:
225g/8oz plain flour, plus extra for rolling
50g/2oz icing sugar
60ml/4tbsp olive oil
1 orange, zest only
For the topping:
3 desert apples, quartered, cored and sliced
25g/1oz caster sugar
1tsp ground cinnamon
125g/4½ oz blackberries
For the vanilla custard:
3 medium egg yolks
40g/1 ½ oz caster sugar
2tsp cornflour
600ml/1 pint Lactofree Semi-Skimmed/Whole
10ml/2tsp vanilla extract
Method
1. Sieve the flour and icing sugar into a bowl. Make a well in the centre and pour in the oil, zest and 45ml/3tbsp water. Mix together with the back of a flat bladed knife and bring together to form a soft dough, adding extra water if necessary. Wrap in cling film and chill for 1 hour.
2. Pre-heat the oven to 375F/190C/Gas Mark 5. Line a baking tray with non-stick baking parchment.
3. Place the pastry on the lined baking tray, dust with a little flour and lightly and carefully roll out into a rough circle approx. 27cm (11 inches) in diameter.
4. Arrange the apples over the pastry leaving a 1.3cm/½inch border.
5. Mix together the caster sugar and cinnamon and sprinkle over the apples.
6. Using your hands or the paper to help you, carefully pull over the edge of the pastry to form a rough crust around the outside of the pizza.
7. Bake in the oven for 20 minutes then scatter over the blackberries and cook for a further 10-15 minutes or until pastry is golden and crisp. Serve with vanilla custard.
To make the Vanilla Custard:
1. In a bowl, whisk together the yolks, sugar and cornflour.
2. Place the Lactofree Semi-Skimmed/Whole in a pan and bring to the boil. Pour over the egg yolk mixture, stirring well.
3. Pour the mixture into a clean pan and bring slowly to the boil, stirring all the time. Reduce heat and gently simmer for 1 minute or until thickened.
4. Remove from heat and stir in the vanilla extract.
Health notes
This is a treat to enjoy on a weekend and to boost your energy levels after a hard day’s gardening or other activity. For a healthier recipe simply add less icing sugar to the base.
The homemade vanilla custard has less than 10% sugar and surprisingly considering its rich and creamy taste, it contains only 2.1g saturated fat per serving. Perfect to accompany the sweet apple and blackberry pizza, and also delicious with chopped bananas for a good old fashioned ‘bananas and custard’.
