Cheese and Onion Potato Tortilla

Ingredients
3 tbsp olive oil
1 large onion, finely sliced
450g potatoes, peeled and finely sliced
2 tbsp chopped sage
6 eggs
100g Lactofree Semi-Hard Cheese, grated
Freshly ground black pepper

Method
1. In a non-stick frying pan, heat 2 tablespoon oil. Add the onion and gently fry until golden and soft. Add the potatoes and sage, cover with a lid and cook until the potatoes are very soft but still holding their shape.
2. In a large bowl, beat the eggs; add the cooked potatoes and onions to the eggs and season with black pepper.
3. In the frying pan, heat the remaining tablespoon of olive oil. Pour the potato and egg mixture into the hot frying pan and gently shaking the pan, cook for 2 minutes until the tortilla is just set.
4. Pre-heat the grill to medium. Invert a large baking sheet over the pan and quickly turn out the tortilla. Then gently slide back into the pan and cook for a further 30 seconds to 1 minute on the other side. Scatter over the grated cheese and place under the grill until the cheese is melted bubbling and golden brown.
5. To serve, turn out immediately onto a serving dish (cheese side up) and finish with some freshly ground black pepper. Serve warm or cold, cut into wedges with a rocket and tomato salad.
Health notes
This tortilla can be made into a substantial meal by adding other salads eg grated carrot with orange and spring onion, also beetroot and a reduced fat coleslaw. It is a good source of protein and only contains 1/3 of a gram of salt per serving. The cheese adds to your calcium intake too. Serving with salad will provide 1 of your 5 a day and help your body to absorb the iron from the eggs. For colour and variety try adding tomato to the tortilla also. To reduce the fat and calorie content use less oil for frying.
