French Toast with Caramelised Banana and Nuts

Cooking time: 20 minutes
Ingredients
4 pieces of wholemeal bread
2 large eggs
½ cup of Lactofree Whole or Semi Skimmed
2 tsp Cinnamon
2 large bananas
30g walnuts or pecans chopped
2 tbsp maple syrup plus extra for serving
Dairy free margarine or oil like groundnut or light olive oil for frying
Method
1. Whisk together the eggs, Lactofree Semi-Skimmed/Whole and cinnamon in a bowl big enough to soak the bread in.
2. Soak bread in the egg and Lactofree mixture and then cook on a frying pan with margarine or oil, until golden, then turn over and fry other side as well. Put the French Toast on plates in the oven to keep warm.
3. Add a bit more margarine or oil to the frying pan, add the chopped nuts, banana and maple syrup, fry until golden and caramelised.
4. Top the French Toast with the banana and nuts, then drizzle with maple syrup.
