Ingredients
Olive oil
¼ chicken stock cube
½ cup of gluten free or normal plain flour
Slosh of Lactofree Semi-Skimmed/Whole
Pinch nutmeg
Lactofree semi hard cheese, grated
Cauliflower (or your choice of vegetable or pasta)
Method
1. Pour a little olive oil into a small saucepan and warm gently.
2. Add about ¼ of a chicken stock cube and about half a cup of flour. Work into a paste and cook for one minute.
3. Add a good slosh of Lactofree Semi-Skimmed/Whole and continue to stir over the heat until it thickens, adding a little more if you need it. (Note: Gluten free flour requires about 1/3 more Lactofree Semi-Skimmed/Whole than regular flour)
4. Add a sprinkle of nutmeg and some grated Lactofree cheese, keep stirring and adding more cheese until you reach the right consistency.
5. In another pan, steam some cauliflower, drain and mix with the cheese sauce.
6. Top with grated Lactofree cheese, and put it under the grill until crispy.

For the last few years I have struggled to get the calcium that my body requires and now it is effecting me. Now I am able to eat yoghurts, cheese and milk and it feels brilliant!

I feel like a human again. At dinner parties I can make food with cheese, something I was never able to do before!

Hi, my son is 16 months old and has been lactose intolerant since 6 months.

I have been unable to get any lactose free items at all. I live in Spain and regularly go to Gibraltar to Morrisons. They tell me they no longer stock any of the items. What do I do Now ? I would be grateful for your help.
