Ingredients
For the meat sauce:
30ml/2tbsp olive oil
1 large onion, chopped
450g/1lb good quality beef mince
1 garlic clove, crushed
2tbsp fresh thyme leaves or oregano
1 × 400g can chopped tomatoes in rich tomato juice
1tbsp sundried tomato paste
150ml/¼ pint red wine
For the cheese sauce:
30ml/2tbsp olive oil
2tbsp plain flour
350ml/12 fl oz Lactofree Semi-Skimmed/Whole
100g/ 3½ oz Lactofree Semi-Hard Cheese, grated
6 sheets fresh or dried lasagne (use those that do not require pre-cooking)
Method
1. In a large pan, heat the oil.
2. Add the onion and fry for 5 minutes.
3. Add the garlic and mince and fry for a further 3-4 minutes, until the mince is lightly browned.
4. Stir in the oregano, tomatoes, tomato paste and wine. Season well, cover and simmer for 30 minutes. Remove the lid and simmer for a further 10 minutes.
5. Meanwhile, preheat the oven to 350F/180C/gas Mark 4.
6. To make the cheese sauce, heat the oil in a saucepan and stir in the flour, cook out for 1 minute. Over a medium heat, whisk in the Lactofree Semi-Skimmed/Whole until the sauce is smooth. Cook over a medium heat, stirring occasionally for 5 minutes. Stir in ¾ of the Lactofree Cheese and season to taste.
7. Pour half the cooked meat sauce into the base of a large oven proof dish. Cover with 3 sheets of lasagne. Pour over the remaining meat sauce and top with the remaining lasagne. Pour over the cheese sauce and scatter over the remaining cheese.
8. Transfer the lasagne to the oven for 30 minutes until browned and bubbling hot.
Health notes
Serve with a large fresh mixed salad for extra vitamins, minerals and to increase this meal to at least 2 portions of your daily 5 a day.
For a lower fat version, dry fry the mince as the first step and pour off any excess fat, then add the onion and garlic rather than frying the onion and garlic initially. This will reduce the fat by approx 11g and the calories by 100 per serving.
