Our guest editor, Sara Habein, author of the blog When Dairy Is Not Your Friend has created yet another fabulous lactose intolerance friendly recipe for Lactofree.co.uk. Makes enough for 500g rice noodles, around 6-8 servings with added meat and vegetables.

Ingredients

30ml/2tbsp peanut oil
375ml/1-1½ cups peanut butter
80ml/⅓ cup water
80ml/⅓ cup soy sauce
250ml/1 cup Lactofree Semi-Skimmed or Whole
250g/1 cup brown sugar
80ml/⅓ cup lime juice
30g/2tbsp garlic powder
15g/1tbsp paprika
cayenne pepper to taste

Method

1. In a saucepan, mix together all ingredients but the cayenne pepper and heat on a medium temperature until smooth.
2. Add the cayenne pepper a pinch at a time, until the desired flavour is achieved.
3. Serve with rice noodles, shredded carrots, bean sprouts, cooked chicken, or any other meat/vegetable choice.

I read somewhere that peanut butter contains lactose. Is there a lactose free version or do I not need to worry? I love peanut butter and it's one of the things I'm really missing since I've cut out lactose!
