Birthday Sponge Cake

Cooking time: 45 minutes
Ingredients
4 large free range eggs
275g/9½ oz caster sugar
3tsp vanilla extract
200ml/7 fl oz olive oil plus extra for greasing tin
200ml/7 fl oz Lactofree Milk
350g/12oz self raising flour
2tsp baking powder
200g jam (any variety)
Watch Lesley Waters use this cake to make Festive Fruity Trifle.
Method
1. Preheat the oven to 180C, 350F, gas Mark 4.
2. Lightly oil and base line tin(s) with baking parchment.
3. In a large bowl, whisk the eggs, sugar and vanilla until really thick.
4. Gently stir in the olive oil and Lactofree Milk.
5. Sieve over the flour and baking powder and gently fold in. Spoon into tin(s).
6. Bake for 35-40 minutes for large sponge, or 25-30 minutes for smaller sponges.
7. Allow to cool slightly, transfer to cooling rack to cool completely. Split and fill with favourite filling.

this looks great i am going to make it for my nephews birthday as we always struggle to find a cake that looks gorgeous, especially chocolate, because 3 people in my house are lactose intolerant! thanks lesley!!

My son aged 3, is a Coeliac, lactose and soya intolerant but we are trying to reintroduce milk, thought that we would try your products and introduce milk gradually with their help.

Hi, I am also sugar intolorent so I use xylitol instead of sugar, but what I wanted to ask because xylitol is so expencive would like to use less than your amount in this receipe. Would this cake still turn out the same with less what would you reccomend?
