Hot Smoked Salmon Cheese Pate on Bruschetta

This creamy cheese and smoked fish pate is delicious served with a refreshing salad and crunchy, garlicky toasts. Also good made with hot smoked trout fillets or mackerel.

Ingredients

125g/4½ oz hot smoked salmon, skinless fillet
150g/5½ oz Lactofree soft white cheese
2tsp horseradish sauce or wasabi
Squeeze of lemon
1tsp cracked black pepper

To serve:
1 small ciabatta or country loaf, cut into eight slices
1 large garlic clove, peeled
2 oranges, peeled, segmented
1 bunch watercress, washed and picked (approx 50g)
Olive oil to drizzle (approx 1tbsp)

Instructions

1. Flake the salmon into small pieces and place in a bowl with the Lactofree soft white cheese.
2. Add the horseradish, lemon and pepper and gently mix together.
3. Pre-heat a griddle pan until hot. Add the bread and cook for 1-2 minutes on each side until lightly toasted and charred. Rub each toasted slice with the garlic clove.
4. Spread the pate on the toasted bread and put onto serving plates.
5. Toss the orange segments, watercress and olive oil together and serve on the side. Serve straight away.

Health notes

For under 300 Calories per serving, this lunch provides you with a good source of protein, a little healthy omega 3 from the salmon and a contribution towards your essential calcium requirement. The orange, watercress and squeezed lemon will also provide half of one of your 5 a day servings. To increase the fibre content serve on a granary/ rustic bread and follow with a piece of fresh fruit.
