Hot Lemon Pudding

Gayle's hot lemon pudding is quick and easy to make - and entirely lactose free to boot!
Ingredients
250ml Lactofree fresh diary drink (whole or semi-skimmed)
100g caster sugar
2 tbsp Lactofree spreadable
2 tbsp lemon juice
2 tsp lemon rind
2 eggs
2 tbsp plain flour
Instructions
1. Pre-heat oven to 180ºC and boil the kettle.
2. Cream together the Lactofree spreadable and sugar.
3. Beat in egg yolks, lemon juice and lemon rind.
4. Fold in flour and the Lactofree dairy drink.
5. Whisk egg whites until stiff. Fold in.
6. Divide the mixture into ramekins which have been well greased. Put the ramekins into an ovenproof dish and ensure that there is a good inch of boiling water around the ramekins.
7. These will take about 20 minutes to be cooked on the top and gooey in the middle.
