Not Missing Out blogger Trina shared her twist on the traditional Eton Mess with us, just in time for the Royal Wedding! This lactose free recipe serves two people and uses Lactofree soft white cheese.
Ingredients
225g strawberries, quartered
150g Lactofree soft white cheese
8 heaped teaspoons of icing sugar
Two meringues
Mint leaves to serve
Instructions
1. Add the strawberries to a pan with a splash of water. Cook on a low heat for 15 minutes, or until the fruits go mushy. Allow to cool.
2. Mix the Lactofree soft white cheese and the icing sugar. Add each spoonful of icing sugar individually and taste to make sure it’s not too sweet.
3. Break up the meringues.
4. Layer the meringue; add strawberry and then the soft white cheese in wine glasses or martini glasses.
5. Add a sprig of mint to the top of each dessert and enjoy!
