Egg Cups
Meal types: Breakfast
Yummy for brunch or a light lunch.
Ingredients
4 eggs
½ cup Lactofree fresh semi-skimmed dairy drink
40g finely grated Lactofree semi-hard cheese
50g diced chorizo sausage
2 sliced tomatoes
Instructions
1. Preheat oven to 200C/400F/Gas Mark 6
2. Whisk eggs and dairy drink together, then stir in the Lactofree semi-hard cheese and the chorizo sausage.
3. Divide in 8 muffin cups, add a tomato slice on top and bake for 6-8 mins.
