Steve says that both he and his children love this recipe, but beware, they tend not to last very long as they are so tasty!
Ingredients
4oz Lactofree spreadable
4oz caster sugar
1 egg
4oz self-raising flour
A few drops of vanilla essence
Instructions
1. Cream the Lactofree spreadable and sugar.
2. Add the egg and beat.
3. Add vanilla and mix.
4. Fold in the flour until smooth.
5. Divide the mixture into cupcake cases (usually around 12).
6. Bake in pre-heated oven at 180ºC for 12-14 minutes.
7. Decorate any way you wish.
