Cheesy Pasta

Cheesy pasta can be the best comfort food and with a little Lactofree, it comes without any discomfort!

Ingredients

1 tbsp olive oil
1/4 cube chicken stock
125ml gluten free flour (or normal plain flour)
1 sprinkle nutmeg
Lactofree fresh dairy drink (whole or semi-skimmed)
Lactofree semi-hard cheese
1 bag gluten free pasta (or normal pasta)

Instructions

1. Pour a little olive oil into a small sauce pan and warm gently.
2. Add about 1/4 of a chicken stock cube, and about half a cup of gluten free flour or normal plain flour if you prefer.
3. Work into a paste and cook for about 1 minute.
4. Add a good slosh of Lactofree dairy drink and continue to stir over the heat until it thickens, adding a little more milk if you need it (gluten free flour uses about 1/3 more milk than regular flour).
5. Add a sprinkle of nutmeg, and some grated Lactofree cheese, keep stirring until you reach the right consistency.
6. In another pan, cook some gluten free pasta to the guidelines on the pack.
7. Drain the pasta, throw it into the cheese sauce pan, and mix.
8. Top with grated Lactofree cheese, and put it under the grill until crispy.
9. Wrap yourself up in a duvet and bunny slippers, make sure the remote and the glass of wine are within reach and enjoy.

The sauce also works well on cauliflower to make cauliflower cheese, or cauliflower & broccoli. It can also be used to make a yummy lasagne.
