Cauliflower Cheese

Liz Dunning’s fabulous Cauliflower Cheese is her ultimate comfort food, combining Lactofree dairy drink and semi-hard cheese to create the perfect topping for vegetables or pasta.
Ingredients
Olive oil
¼ chicken stock cube
½ cup of gluten free or normal plain flour
Slosh of Lactofree dairy drink (whole or semi-skimmed)
Pinch nutmeg
Lactofree semi-hard cheese, grated
Cauliflower (or your choice of vegetable or pasta)
Instructions
1. Pour a little olive oil into a small saucepan and warm gently.
2. Add about ¼ of a chicken stock cube and about half a cup of flour. Work into a paste and cook for one minute.
3. Add a good slosh of Lactofree dairy drink and continue to stir over the heat until it thickens, adding a little more if you need it. (Note: Gluten free flour requires about 1/3 more dairy drink than regular flour)
4. Add a sprinkle of nutmeg and some grated Lactofree cheese, keep stirring and adding more cheese until you reach the right consistency.
5. In another pan, steam some cauliflower, drain and mix with the cheese sauce.
6. Top with grated Lactofree cheese, and put it under the grill until crispy.
