Caramel Popcorn
Meal types: Snacks
The perfect movie-watching snack!
Ingredients
100g popcorn maize
2 tbsp groundnut oil plus more for coating bowl and spoon
100g demerera or granulated sugar
¼ cup of water
¼ cup of Lactofree fresh dairy drink (whole or semi-skimmed)
¼ tsp fine salt
½ tsp carbonate of soda
Instructions
1. Preheat oven to 100C/225F/Gas Mark 1/4.
2. Cover a baking tray with parchment or baking paper and oil the inside of a large bowl and a heat proof spatula.
3. Place popcorn maize and 1 tbsp oil in a large pot, partially covered, over medium heat. Once popping begins, shake pan frequently; when popping slows down to about 3 seconds between pops, remove pan from heat and uncover. Transfer popped corn to the oiled bowl.
4. In a medium saucepan, combine sugar and water over medium-high heat; stir to dissolve sugar. Stir constantly, until it becomes thick on the spoon, without burning.
5. Add Lactofree dairy drink and 1 tbsp oil and bring back up to the boil.
6. Stir in salt and carbonate of soda (soda will make it bubble up, so be careful). Pour over popcorn; toss with spatula while rotating the bowl. When completely coated, transfer to prepared baking sheets. Bake, stirring occasionally, for 30 minutes until golden brown; popcorn will crisp when cooled.
