Bank Holiday Parcels

Created by Not Missing Out blogger Trina, these versatile little lactose free treats are perfect for a snack or as a main meal with a salad. As Trina says "They’re really easy to make and you can make them ahead of time and just cook them when you need them".
Ingredients
1 pack of ready made filo pastry
1 cooked chicken breast, cooked and sliced
50g chorizo, cubed
2 small cooked beetroot, cubed
170g pack sundried tomatoes, drained and chopped
75g Lactofree soft white cheese
Olive oil
Toasted sesame seeds
Instructions
1. Prepare the filling for the parcels. Wash your hands and utensils straight after chopping the beetroot so it doesn’t stain. Add the chicken, chorizo, beetroot and sundried tomatoes to a bowl and mix.
2. Add the Lactofree soft white cheese and make sure it’s evenly coating all the filling.
3. On a clean and dry chopping board place one of the sheets of filo pastry. Brush with a little olive oil and place another sheet on top. Brush this oil adding a third layer of filo. Then halve the pastry and place two teaspoons of the filling on each half.
4. Brush oil around the outside of each parcel and roll. To do this bring each of the long sides in towards the filling and roll the filling over in the pastry. Place it on a baking tray.
5. Repeat this until you’ve filled out of pastry or filling.
6. Brush each of the parcels with some more olive oil and sprinkle sesame seeds on top.
7. Bake in the oven at 180ºC fan for about 20 minutes until the parcels are golden brown.
8. Serve – and enjoy
