Asparagus, Soft White Cheese and Basil Tagliatelli

This delicious pasta makes use of seasonal asparagus for a light, wholesome meal that is ready in 20 minutes flat!

Ingredients

1 bunch asparagus (cut off the woody ends)
1 onion (chopped)
2 tsp oil
120g Lactofree soft white cheese
Small handful basil (chop the leaves)
350g tagliatelle
Black pepper
Crushed garlic (optional)

Instructions

1. Remove the tips off the asparagus and cut the stalks into discs (roughly 1cm thick each).
2. Add the chopped onion to the heated oil in a pan and fry gently until soft. Add the asparagus and cook for a minute.
3. Stir in the Lactofree soft white cheese and season with black pepper (you can also add in the garlic here if you wish).
4. Cook the tagliatelle until al dente (as per the instructions on the pack).
5. Once cooked, drain and add to the pan with the sauce. Stir well to coat the pasta.
6. Add the chopped basil and mix before serving.
