Fishcakes
Meal types: Main Meals
Delicious fishcakes for the whole family which are both lactose and egg free.
Ingredients
Large fillet of cod or any fish of choice
4 medium sized potatoes
1/4 pint of Lactofree fresh dairy drink (whole or semi-skimmed)
1 tbsp of Lactofree soft white cheese
Instructions
1. Boil the potatoes for 20 mins and the fish for 15 mins.
2. When cooked, mash the potatoes with some of the Lactofree dairy drink and the Lactofree soft white cheese.
3. Add fish to your mash and mash in with the potatoes.
4. Take a small handful of mixture and mould into flat rounds, brush with Lactofree whole or semi skimmed, then cover with the breadcrumbs.
4. Place under the grill until golden brown.
5. Serve with vegetables of your choice, salad or chips.
